What I Ate Wednesday No.55

Oat So Simple porridge topped with Graze maple and pecan granola topper.  It added a nice little crunch.  Cup of tea.

I stopped off at a local cafe (mid bicycle ride) and had a hot chocolate and shared a chocolate salted caramel muffin.

Homemade French toast topped with icing sugar and raspberries.  I was amazed at how well this turned out for a first attempt, will certainly make this again!  With a glass of water.

Half a pizza Express margarita pizza with half a pack of Tilda Egg Fried rice and plum tomatoes.  Some people think pizza and rice is a weird combo...I like it though!  Glass of water.

American Style Pancake Recipe

I am a HUGE lover of pancakes! I just love covering them in the millions of possible toppings that can go on them.  In the past I have always made the thin crepe style ones but have been wanting to try making some American style thick and fluffy ones.

One dismal Sunday lunch time I decided to give it a go.  As they turned out so well I thought I would share the recipe with you all.  It made 12 pancakes, so serves 3-4 depending on how greedy you are feeling.

300g self raising flower
1 Tsp baking powder 
1 Tbsp maple syrup 
1 Tbsp caster sugar 
2 medium British Lion eggs*
300ml milk

Step 1: Mix together the flour, baking powder and sugar in a large bowl.
Step 2: Make a well in the centre of the mixture and crack in 2 eggs.  Whisk them up.
Step 3: Next gradually add the milk to the mixture, whisking as you go.
Step 4:  Finally add the maple syrup and give it a final whisk
Step 5: Put a large frying pan on to heat up to a medium temperature and add some oil and a small knob of butter.
Step 6: Add a ladle of mixture to the pan and let it sit for a couple minutes.  Once bubbles start to appear on the surface its time to flip it over.

Top tip:  Put the oven on low and each time a pancake is ready pop it on to a plate in the oven to keep warm.  

I also had 2 pans in the go to speed up the process but if you have 1 large frying pan that's even better!

They were just as easy to make as the crepe style ones and just as delicious.  I also found them more filling.

I had my usual platter of scrummy toppings at the ready!

What I Ate Wednesday No.54

Well what do ya know its porridge again...topped with flaxseed  a spoonful of apple sauce and fresh raspberries.  Check out the heart shaped raspberry in the middle, it was kinda squat on its side in the packet and was a perfect heart shape!  Plus the usual morning cuppa.

Cheese on toast with squirt of tomato sauce and a packet of Mcvitites salt and vinegar Oddities.  Glass of water.


When in need of a super fast tea this Pizza Express spinach and ricotta filled pasta fits the bill perfectly.  I like to top with a sprinkle of cheese and serve with a slice of garlic bread.

5 Tips for Stress Free Christmas Present Shopping

Hi everyone!

It's November, time to start thinking about the 'C' word...Christmas of course!  I know how often thinking of what to get people and traipsing around the shops can lack enjoyment at times.  So I have included below 5 tips for stress free Christmas present shopping.  I hope you find it useful.

1. Ideas

Its the first hurdle isn't it, thinking of what you could get everyone.  Firstly write a list of everyone you need to buy presents for and jot down possible ideas as you think of them.

2. Wish List 

Most sites have a 'wish list' option these days, (e.g Amazon).  Ask friends and family to create wish lists of their own and give you access to it, that way you know you'll get them a present they actually want, which also takes the stress out of thinking of ideas.  Then when you are ready you can do 1 order of everything you need from from that website and save on postage too.

3. Set a budget 

No-one wants to start a new year with loads of Christmas debt hanging around.  So stick to buying what you can afford, it really is the thought that counts!

3. Set yourself a deadline 

For me setting a deadline helps to focus the mind.  The date I have set myself this year is 30 November, that will be too late for some and too early for others.  I personally like the Christmas shopping out of the way before December so I can enjoy the build up visiting family, attending Christmas fetes and avoiding the hellishly busy city centre shops during December.

4. Purchases List

As you buy things keep a note of what you have got, my mind goes to mush in the middle of a busy department store and I consult the list (which I keep on the notes section of my phone) to see what I need.   
The list also comes in handy for future Christmases when I can't for the life of me remember what I bought them the previous year!  It also helps with keeping on budget as you can add it up as you go along.

5. January Sales

Being organised for Christmas and shopping savvy can start way back in January.  Stock up on the half price wrapping paper, tags and Christmas cards in the sales and squirrel them away for 11 months time.  A couple less things to worry about come December.

During a shopping trip in Bath I stopped off in Prezzo and had Wild Mushroom Penne which had shiitake, chestnut, oyster and button mushrooms, garlic, peas, spinach, asparagus, truffle infused oil and bella lodi cheese in a mushroom sauce.  I had it in the light version which cost £1 extra to have a smaller portion which came with salad and dressing. My drink was tap water.


I was still pretty full from a large lunch so I just had a cinnamon pretzel dipped in Lotus Biscoff biscuit spread (I have done a post on my love of this spread, you can read it here).

5 Things to do in the City of Bath

Bath is a beautiful city made predominantly of the local Bath limestone.  It is set within the Avon Valley in Somerset and is a designated area of outstanding natural beauty.

Here are 5 things that you may wish to do when visiting Bath.

Roman Baths
It is often the first place people think of when the city of Bath is mentioned and it is definitely worth a visit.  It is a well-preserved Roman site once used for public bathing.  Around 1 million visitors per year walk around the baths and museum.  You won't need your swimming kit though as the water cannot be entered, the algae in the water gives it its green appearance as per the picture below.  If you do want to try the water though, there is a fountain at the end of the tour which you can drink from, though be warned, it has a very metallic taste!
Tickets to enter cost around £14 (prices correct as at 2/10/15).  A free audio guide (available in various languages) is included in the price.

SouthGate Shopping Centre
SouthGate is Bath's main shopping centre with over 50 shops including the likes of Debenhams, Hollister, Topshop, Apple Store and H&M.  If you are arriving by train this is what you will see upon exiting the station.  If arriving by car then the nearest car park is beneath the shopping centre.  Nearby restaurants include Gourmet Burger Kitchen, Giraffe, Prezzo, Nandos, Pizza Express and Graze.

Christmas Market
Another thing Bath is known for is its Christmas Market.  Come Christmas time 170 chalets appear around the Roman Baths and Bath Abbey which sell Christmas gifts, mulled wine, candles, decorations and tasty cheeses.  What makes this market different is over 80% of the stalls are local businesses from Bath and surrounding areas.  As you would expect is is often very busy but it posseses a very festive atmosphere at the same time.  

This year the market opens on 26th November until 13th December 2015.

Pulteney Weir & Pulteney Bridge
The Pulteney Wier is on the River Avon just down stream from Pulteney Bridge.  It is a gorgeous horseshoe shape and often tourists like to sit and admire/photograph it.

Thermae Spa
After a trip  to the Roman Baths why not make like a Roman yourself and spend a day in the Thermae Spa which opened in 2006.  Here you can bathe in Britain's only natural thermal waters as the Celtics and Romans did over 2000 years ago.  You can see my full review of it here.  The Thermae spa is just a 2 minute walk from the actual Roman Baths.
